Veggie Nourish Bowls



The perfect meal prep recipe for an easy grab and go lunch! Make these your own by using your favorite veggies and seasonings, and you could even add grains and/or protein to make them even more filling and nutritious. Be sure to keep the dressing on the side if not eating immediately.


Serves: 4

INGREDIENTS:

1 head cauliflower, cut into florets (~4 cups)

1 head broccoli, cut into florets (~4 cups)

2 sweet potatoes, cubed (~4 cups)

1 (10 oz) bag shredded brussels sprouts

1/2 cup pistachios, or nut of choice

1/2 cup pitted & chopped dates, or dried fruit of choice

Tahini based dressing of choice, I love the Trader Joe's goddess dressing

Olive oil, for drizzling

Spices: salt, pepper, garlic powder, paprika

Optional add-ins: brown rice, quinoa, grilled chicken, chicken sausage, etc.


  1. Preheat oven or air fryer to 400°F.

  2. I recommend prepping and cooking your veggies separately (or on separate baking sheets) since some cook faster than others. Once chopped, add cauliflower to a bowl, drizzle with olive oil, season liberally with your spices, then toss to coat. Transfer to a baking sheet or air fryer basket. Repeat with your broccoli and sweet potatoes.

  3. Air fry or roast your veggies for 12+ minutes until tender and crispy. The sweet potatoes will take the longest!

  4. While those veggies roast, heat olive oil in a skillet over medium heat. Add shredded brussels sprouts and sauté for ~3 minutes until softened. Season with salt and pepper then transfer to a large bowl.

  5. Once your other veggies are done roasting, transfer them to the same bowl with the brussels and add in the pistachios and dates. Toss everything until well combined.

  6. If adding grain and/or protein, cook according to package and combine with the other ingredients.

  7. At this point you can portion into separate containers for meal prep - just be sure to keep the dressing on the side until your ready to enjoy!

Keeps well in the fridge for ~3 days.
