
These crispy chicken katsu bowls are easily one of the most requested meal prep recipes from my clients. It's the perfect savory asian bowl that will become a staple in your household. Once you've made the marinade & the spicy aioli, the rest is quick & easy!
Makes: 4 servings
Ingredients
Marinade/Sauce:
¾ cup coconut aminos
1 tbsp sesame oil
1 tbsp honey
1 tbsp fresh ginger, grated
2 green onions, thinly sliced
1 tsp sesame seeds
Chicken:
1 lb thin sliced chicken breast (~4-5 pieces)
1 cup breadcrumbs, for dredging
2 tbsp avocado oil, for cooking
2 tbsp sesame oil, for cooking
Bases:
2 cups cooked jasmine rice *I recommend microwaving 2 packs of the frozen jasmine rice from Trader Joe’s
1 ½ cups cucumber, sliced/chopped
1 cup shelled edamame
3-4 green onions, thinly sliced
Sesame seeds, for garnish
Spicy Aioli:
½ cup mayo
¼ cup sriracha
½ tbsp coconut aminos
Juice of ½ lime
½ tsp garlic powder
Instructions
Whisk all marinade ingredients together until well combined. **Half of this will be poured over the chicken to marinade, and the other half will be used for the base of the bowls.
In a medium bowl, pour ~½ of the marinade over the chicken and let sit for at least 30 minutes, or up to 4 hours.Â
When ready to cook, add breadcrumbs to a shallow bowl. Coat both sides of the chicken with bread crumbs.
Heat a non-stick skillet over medium heat, then add both the avocado & sesame oil. Make sure there is plenty of oil to allow the breadcrumbs to get crispy and not stick to the pan.
Cook the chicken for 3-4 minutes per side until golden brown, and the internal temp is 165°F.Â
Transfer to a clean cutting board and let cool for at least 10 minutes before slicing.Â
Cook jasmine rice according to package directions.
Combine cucumbers, edamame, & green onions in a bowl, and drizzle with a couple tablespoons of the marinade/sauce.
Whisk together all the aioli ingredients until well combined.
Assemble your bowls by adding a scoop of rice, scoop of veggies, sliced chicken, sesame seeds, and with a big drizzle of spicy aioli. If you have remaining marinade/sauce then you can also drizzle that over the bowls too!
